Currants, not carrots

Carrots can go well in a cake (especially if it’s the kind with cream cheese icing); just not in English pound cake. In the article Jason’s time to shine (printed in our September issue), we wrongfully stated that an English pound cake made by Jason Hay as part of his winning entry for the Weston Milling Trainee of the Year Competition contained carrots – when really we meant to say currants. Apologies to Jason for this small but very significant mistake.

We would like to take this opportunity to also mention that Jason is very grateful to Weston Milling for giving him the tools to become a successful baker – something which wasn’t mentioned in the article. “I would like to thank Weston Milling, because without their support and top-quality products I wouldn’t be where I am today,” he says.
