When a customer asks for food that is free of certain food allergens, they are putting their faith in you to get it right. While food allergies only affect a relatively small percentage of the population, the consequences of being exposed to a food they are allergic to can be serious – even life-threatening – and the repercussions for your business can be severe.

When serving customers with food allergies, it’s important that you ensure the meal is safe and free of the allergens they tell you about. Even tiny amounts of a food allergen may trigger a severe reaction, so make sure there are no trace amounts present from cross-contamination – from food surfaces, utensils and equipment used for other dishes.

Train your staff so they know about the consequences of allergic reactions and understand the importance of providing accurate information to food-allergic customers.

Teach them the procedure for dealing with a customer who asks about allergens in food, and identify which staff member can give customers the information they need. It’s also a good idea to have a clear system for front-of-house staff to mark an order to notify the chef and kitchen staff that a dish needs to be free of a particular food allergen.

And remember: if there is any doubt whether a food contains even the smallest amount of a food allergen, tell the customer. Their life is in your hands.
